👉 The Bachelor's degree programme in Food Safety (B.Sc.) is aimed at prospective students with university entrance qualifications who wish to apply scientific knowledge in the food industry. The curriculum includes, among other subjects, food law, hygiene, quality management, as well as basics of chemistry, biology, and food microbiology. This practice-oriented programme features laboratory exercises at the locations in Idstein and Geisenheim and offers specialisations, for example in sales or value chain management. Students acquire competencies for the production of safe food and the monitoring of manufacturing processes. The full-time degree lasts six semesters, has no admission restrictions (NC-free), and concludes with a Bachelor of Science. The programme is offered in cooperation with Geisenheim University and is officially recognised by the state.

Requirements and Target Group

The Bachelor's degree programme in Food Safety is aimed at prospective students who aspire to a career in the food industry and have a strong interest in the natural sciences, especially chemistry, biology, and technology. The target group primarily includes high school graduates as well as individuals with a professional qualification who wish to focus specifically on the topics of food safety, quality management, and food law. The programme is also suitable for anyone who wants to take responsibility for consumer protection, hygiene, and product quality and is looking for a practice-oriented education in modern laboratory environments.

With which qualifications can you start?

To be admitted to the Food Safety programme, you need a recognised university entrance qualification, for example:

  • General university entrance qualification (Abitur)
  • Subject-specific university entrance qualification or entrance qualification for universities of applied sciences
  • A foreign university entrance qualification recognised as equivalent
  • Alternatively: a professionally recognised qualification considered equivalent, e.g. a passed master craftsman’s examination or a completed vocational training followed by at least three years’ professional experience in the relevant field in accordance with the requirements of the Hessian Higher Education Act

You do not need a specific grade point average (GPA), and professional experience is not required for admission. The programme starts each winter semester at the Idstein campus.

You should enjoy scientific and technical questions and laboratory work. Analytical thinking skills and careful, responsible working are important personal prerequisites, as the focus is on the safety and quality of food. Good communication skills as well as an interest in teamwork will support you during your studies and in your later professional life. In addition, organisational talent and a willingness to continuously acquire new knowledge about legal regulations and technical standards are helpful. English skills will facilitate your access to specialist literature and exchange in the international context.

In the Bachelor's degree programme in Food Safety at Hochschule Fresenius, you will engage with the scientific, technological, and legal fundamentals surrounding the safety of food. The curriculum links general and organic chemistry, mathematics, physics, and biology with specialised focuses such as food law, hygiene, quality management, and food microbiology.   • Mathematical, physical, and statistical methods (including biometrics)

  • Food law, HACCP concept and international food safety standards
  • Instrumental analytics and bioanalytics for testing food
  • Typical risks such as animal pests and food toxicology
  • Plant-based and animal-based food, convenience products, bakery and confectionery, beverages

You select specialisations from various elective modules, ranging from case study projects to specific food categories. The course is rounded off with practical laboratory internships, company excursions, and subject-specific English, preparing you for international activities.

Course Structure: How is the Food Safety Degree Organised?

The course is designed as a full-time on-site study programme with a standard period of study of six semesters and starts annually in the winter semester. The degree programme is conducted in cooperation with Hochschule Geisenheim University. The organisation of the study process envisages a close integration of theory and practice. Important elements are:
